I made this dessert for Thanksgiving and it may be one of the best things I have ever done in my life. FYI – this was a Pinterest WIN!
The fun part of this dessert was making the pumpkin puree from scratch. You already know I am part of a local co op where I get a nice load of fruits and veggies twice a month for $50. These are locally sourced and organic. I got two Sugar Pie Pumpkins and was determined to use them this year.
Start with a pumpkin – I used two smaller ones for this recipe
Cut in half and gut (save the seeds for roasting later)
Put in the oven at 400 for an hour until the pumpkins are soft
Let cool and then add to food processor
Blend and enjoy your homemade pumpkin puree
Never using canned pumpkin again!
